Vegan shortbread

Being Anzac Day today, I was planning to make my choc chip Anzac biscuits but we've run out of butter!
And we are camped up by the beach in the middle of nowhere so there was no opportunity to go and buy some more.
So, instead I decided to try to make some shortbread using coconut oil!
We were all sceptical but wow! They are delicious!!
