Zoodle stirfry

For Mother's Day today I got a vegetti! I've wanted one for ages, but especially now that I'm trying to avoid gluten as well.
For lunch today hubby took our vegetti for its maiden journey :)
And it was delicious!
Ingredients:
1.5 x zucchini - made into spaghetti spirals with a vegetti
0.5 x red onion
3 x mushrooms
2 x garlic cloves
1/4 x eggplant
Nuttlex
Nutritional flakes

Method:
- make your zoodles - rinse and spritz with salt.
- stir fry mushrooms, onion, garlic, eggplant in a small amount of Nuttlex.
- when stir fry is ready, add zoodles and stir through.
- season with nutritional flakes (or hubby had Parmesan)
- enjoy!

After note.
This was delicious, but the zucchini was a bit overpowering for hubby. Next time I think we will try with a tomato pasta sauce, or a soy sauce based dressing.

Approx $2 for 2 adults.
