My first recipe is one of my recent favourites because it's quick and easy!
Ingredients:
1/3 cup of butter-melted (*see below for vegan variation)
1 tablespoon sugar
1 1/2 tap vanilla
1 cup self raising flour (** see below for GF variation)
3 TB spoons of milk (I use soy) if the mixture is too dry (*)
1 handful choc chips (*)
2 handfuls cooking choc for melting (*)
Instructions:
1- combine butter (*), sugar and vanilla.
2- add flour (**)
3- mix in choc chips, add milk if needed
4- make little balls and put in fridge/ freezer for 30 mins.
5- melt chocolate and roll balls in it to coat. Put back in fridge on baking paper for atleast 5 minutes to set

(*) vegan variation:
- substitute butter for a combination of nuttlex and coconut oil. I find 1 tb spoon coconut oil and the rest nuttlex works well for me
- use dairy free/ vegan chocolate.
- use soy or almond milk

- use GF self raising flour. You can buy this at any supermarket including Aldi.
