I've had a really hard time trying to find a quick and easy, yet delicious vegan and gf breakfast!
So I made these!

Vegan & GF carrot muffins!
Yum!
Ingredients:
dry:
2 cups oat flour
4 Tsp baking powder
1/2 C grated carrot
1/2 Tsp salt
1 Tsp nutmeg
1 Tsp cinnamon
1/4 cup sultanas
1 Tsp brown sugar
Wet:
1/4 cup unsweetened apple sauce
2 TB sp coconut oil
1.5 C soy milk (or almond)
Method:
- mix dry
- mix wet
- mix wet and dry together
- fill muffin cups 2/3 full and bake 200C for 20-25 minutes.
To make applesauce: grate 1 apple and boil with 2 tbsp lemon squeeze and 2 tbsp cold water, then allow to simmer.
